  • 200 g Crumbled Feta Cheese
  • 200 g Sundried Tomato in Oil Drained and chopped

  • 15 ml Barbecue Spice We like Robertsons
  • 30 ml olive oil Extra Virgin
Instructions
  1. Preheat the oven to 200°C. Loosen the skin of the chicken thighs with your fingers.
  2. Combine the feta cheese and sundried tomatoes in a small bowl. Stuff the feta mixture evenly under the skin of each chicken thigh.
  3. Season the chicken thighs with the Garlic Salt and Barbecue Spice. Place the chicken thighs on a roasting pan and drizzle with olive oil. Roast for 30 minutes, add the cocktail tomatoes and roast for another 10-15 minutes or until the chicken is golden brown and the tomatoes are blistered.
